Herb Amaranth or Pigweed is a herb that is a traditional plant in Africa and South America and is used in many of the dishes from these areas. It is also used in many Greek and Asian meals including the Dal which many of us would have tasted when making our curry 'selection'. The Pigweed is easy to cook and and is very popular when just served with olive oil in a basic salad. This is a very leafy variety which makes it very good for harvesting.

The seeds should be sown from March until May and the leaves harvested from June right through until late October. Pick and use the leaves a little like an extra tender spinach. These leaves are best before the flowers form.
