This variety of squash is rare in the UK. The plant has vigorous vines and produces large, green fruit. The beautiful speckled skin is hard and inside a soft, white flesh and right in the centre is a stringy membrane that the Spanish like to sweeten and use as a pastry filling called cabello de angel [angel hair]. In fact, this popular dish is very Spanish and may be seen on your travels!

The stringy centre is also very good when seasoned with pepper and fried with some olive oil. Once cooked it looks a little like a Hash Brown and it makes a real difference with a meal and as it has a natural sweetness it goes well with all types of food.

Sow March to May for harvest June to October.
