Cardoon

Cardoons are gourmet winter vegetables that can continue growing into the spring. However, they are better eaten young and tender, similar to artichokes. Stems tend to be prepared rather than the flower (but only because they are smaller than the artichoke). Eat raw when young, or if older, cook them first. Use in dips, sauces, stews and salads. Look and taste similar to celery. The large thistle-like perennial plants are very attractive and architectural for an unusual planting scheme.
