Celeriac Okay so the name gives it away a little, but the celeriac is an edible root that has a taste very similar to celery and is sometimes known as celery root although the flavour is lighter than the celery. Whilst it has a really very good taste and is easy to both grow, cook and digest the celeriac has never really become a very popular vegetable in the UK even though they arrived in Britain during the early 18th century. They can be eaten both raw and cooked. When raw the celeriac contains vitamin C and soluble fibre that can be used to lower cholestrol. The celeriac can be used in many ways and is great in soups, roasted, chipped and in a winter stew.
The seed is best sown in a seedtray and then transplanted. They do like a good, long growing period in good fertile soil with plenty of water in the warmer months. Whilst the celeriac is a winter harvest vegetable it is not desperate for frost (unlike parsnips and sprouts) so they are best lifted before the first of the heavier cold spells therefore harvest your celeriac in late November and early December.
