Fennel

This anise-flavoured bulb adds a subtle dimension to meat, fish and vegetable dishes. Plants are attractive to bees and butterflies. Eat when fresh.

There are two types of Fennel; Florence fennel and garden fennel. Almost every part of both varieties of Fennel can be eaten but it is the seeds of the Fennel that are renowned for their medicinal properties.

Florence fennel has a hard, bulbous, fleshy base with a good crunchy texture and a delicate but distinctive liquorice flavour. It is normally eaten raw in all types of salad but can be boiled or braised. Garden fennel has dark green stems and feathery leaves. They have a refreshing, delicate flavour that is ideal when served with fish and other seafood. Fennel contains beta carotene which our bodies convert to vitamin A. Also at only around 12 calories per 100g it is a good low-calorie addition to a meal.

Fennel seeds are one of the world's oldest spices and used in traditional medicine across the world and they have been used to make a tea which has a refreshing taste and can help with a range of digestive problems from colic to hiccups.
