Kale

Kale is a member of the cabbage family and is also known as curly kale, collard and borecole. It is native to Britain and the eastern Mediterranean region where it has been grown for food for over 2000 years with many examples being found in excavations.

Kale is an excellent source of antioxidants, vitamin C and beta carotene. The body converts beta carotene into vitamin A which is needed for healthy skin and resistance to infection. A 100g portion of kale provides more that 75% of the daily intake of vitamin A and almost twice the daily intake of vitamin C which also helps to maintain a healthy immune system.

Who would have thought that one little vegetable could contain all of this. Kale is very easy to grow and is not only very tasty to us but is loved by chickens!
