If you enjoy eating parsnips then they are really worthwhile growing as they are plagued by few pests and keep in the soil until they are required unlike carrots that should be lifted following the first frosts.

The parsnip is a sweet, starchy winter root vegetable that makes a tasty and healthy alternative to potatoes. It can often be overlooked as a rich source of fibre which can help to maintain a healthy digestive system. Parsnips are a good source of vitamins C and E and contain folate which help to maintain healthy blood cells. As a winter vegetable remember that parsnips are at their sweetest following the first frosts as exposure to the cold weather causes the starch within the parsnip to start turning to sugar.

Parsnips are quite easy to grow, we have already said that they are plagued by very few pests, but they do have a quite long growing period therefore they should be sown during the months of March, April and May on an area of your plot that is not going to be required for the best part of a year. The soil should have been dug to quite a good depth which will allow the parsnip root to develop well. Once they have been planted you can almost just leave them alone, just keep the area weeded and water during the warmer summer months.

As we have said on our radish selection page, it is a good idea to plant a quick growing crop along with the parsnips which will grow and be harvested without harming the parsnip and makes good use of the land. Radishes are a very good crop for this purpose.
