Salsify is grown for many reasons. It has a beautiful delicate flower, herbal properties and a fantastic edible root which is very popular in both France and Italy.

The Salsify is often called the 'Oyster Plant' due to the delicacy of its root which is said to taste like oyster only a little sweeter. Youngs roots can be grated in salads from early Autumn and older roots are normally cooked. The flowering shoots can be used like asparagus either raw or cooked and the flowers are also edible.
