Artichokes

The artichoke is mainly a Mediterranean crop and the wild plant was known by ancient Greeks and Romans. It is a staple food over much of Italy. The beautiful blue-grey-purple foliage of this vegetable ensures that it can take pride of place in any ornamental kitchen garden. It crops for 3-4 years! Italian chefs love artichokes and prepare them in various ways: in pasta, served al fresco in antipasto platters or dressed simply with olive oil, garlic and lemon juice.

To grow from seed, artichokes generally need to be kept warm in a sunny position and good ventilation, perhaps in a greenhouse or on a windowsill. They should then be transplanted to a sunny part of the garden when the soil is workable, rich and well-drained. (preferably well prepared with organic matter). The young plants should have several weeks of cool weather to set chokes but must be protected from any hard frosts.
